The last achievements in the fundamental and practical investigations of the chitin and chitosan are presented. The perspective directions, including the molecular mechanisms of the rise of system stability of the plants to pathogens under the action of chitin derivatives, mechanisms of interactions between chitosan and dsDNA, antiviral and anticancer action of the various physico-chemical methods for the analysis of chitin and chitosan derivatives structure are given. New achievements in the use of various physicochemical methods for the analysis of chitin and chitosan derivatives structure are given. New technologies in chitosan production from different sources are described. The papers of more than 120 scientists from Russia, Ukraine, Belarus, Uzbekistan, Latvia, Israel and France are given.
This collection is destined for the scientists in various spheres and for the practical workers in agriculture, medicine, cosmetics, fisheries and food industry.
