The last achievements in the fundamental and practical investigations of the unique nature biopolymers – chitin and chitosan are presented. Chitosan is named as a substance of the XXI century. The perspective directions, including the molecular mechanisms of the rise of system stability of the higher plants to pathogens under the action of chitin derivatives, obtainment of transgenic plants with chitinase genes, directed transport of drugs, antioncogenic and antiviral action of chitin and chitosan derivatives, development of the new generation of the chiral selectors on the basis of chitin derivatives are considered. New achievements in the use of various physicochemical methods for the analysis of chitin and chitosan derivatives structure are given. New various and unexpected prospects of these unique biopolymers usage are viewed. Papers of more than 120 scientists from Russia, Ukraine, Belarus, Uzbekistan, Lithuania, Latvia and Poland are given.
This collection is destined for the scientists in various spheres and for the practical workers in agriculture, fisheries, medicine, cosmetics and food industry.
